The Merlot vineyard used for the production of this spectacular Siclian wine born on slopes which has a characteristic black color from which it took its intense aromas and the sapid and warm taste. The cultivation soil is located in Menfi the south-west side of Sicily is the Agrigento province. The vine used is 100% Merlot and it is classified as DOC Rosso Sicilia. The soil is very clay. The profit is 85 quintals per hectare. There is a maceration of the grapes for 8-10 days at 22-25°C. It follows the maceration in steel tanks at 22°C for 3 months and finally there are further 3 months in bottle.
Characteristics of the Merlot Sicilia DOC
It has a ruby red color with violet reflection. The smell is intense and persistent with plum, quince jelly, broom and rosemary. The taste is sapid and warm, but also persistent with a licorice aftertaste. There are also some aromas of mulberry and wild asparagus.
Suggested pairings with this red wine produced by Mandrarossa
The red wine Merlot of Mandrarossa is perfect with both medium and more aged cheeses. It is also very good with rabbit roasted meats or with wild boar but also with braised meat. It can be aged for 3 years. It must be served at 18°C in a Ballon wine glass.
