The Lugana sparkling wine Brut of Zenato is made with 100% Trebbiano di Lugana grapes and it is made with the Metodo Classico. The soils are located in Peschiera and Desenzano hamlets at 70-80 meters above the sea level with a clay soil. It is used the Guyot method with a density of 3700-4000 trees per hectare. The vineyards are 40 years old with a profit of 120 quintals. The grape harvest takes place at the beginning of September and there is a manual picking. The fermentation takes place with the grapes yeasts in steel at 16°C up to the re-fermentation moment. The wine rests for 24 months and matures on the yeasts. There is a clearing process and lately a disgorging to remove the residual.
Characteristics of the Lugana Metodo Classico Brut DOC
It has a light straw yellow color with golden reflections and a fine, persistent and elegant perlage. The smell is intense with white flowers, pear, apple, peach and citron aromas. The taste is balanced and enveloping with a silky acid hint and freshness.
Suggested pairings with this Lugana by Zenato
It is perfect as appetizer, with salty snacks and with delicate vegetables creams. IT is good also with fish in humid or braised. The service temperature is 7°C.
