The wine named “Le Difese”, with the Tuscany IGT certification is produced by the San Guido estate since 2003. The blend is made by 70% Cabernet and 30% Sangiovese grapes. This wine of the San Guido estate represents the compromise within quality and right spread of the estate knowledge and of its prestigious and extreme sophistication. The wine is characterized by the good structure and the extreme softness characteristics that makes it extremely pleasant and drinkable. It is suitable for everyone also to the less refined palates because of its aspects like the simplicity and the harmony with the Italian gastronomic courses. The soils of the San Guido estate have different morphologic characteristics with a strong presence of calcareous zones rich of marl and rocks and partially clay; they are all located at 100-300 meters with an optimal exposition at South-west. The cultivation method is the cordon spur which permits a density from 5500 to 6250 trees per hectare. There is a manual picking of the grapes starting from the Cabernet Sauvignon in the half of September to arrive in the cellar already matured and with a reduced alcoholic degree. The Sangiovese grapes are picked at the end of September. The picking finishes at the end of September or in the first week of October. The wine making process is the classic of the San Guido estate. It starts with the pressing and the destemming of the grapes. The fermentation in stainless steel tanks takes place under temperature control without the addition of any yeasts. The maceration on peels lasts 9-12 days for the Cabernet Sauvignon and 15-18 days for the Sangiovese with following pumping off of the must for sweeting the tannins of the wine. The malolactic fermentation takes place in stainless steel. After the malolactic fermentation takes place the aging for 12 months in oak barrels of second passage. Finally there is the bottling and the aging in glass per 3 months before being commercialized.
