This sensational white wine by Umani Ronchi is produced with 100% Pecorino grapes, cultivated in Roseto degli Abruzzi. The plants are located on soils characterized by sands. Every year the staff selects the best bunches from the best portions of the vineyard in Roseto degli Abruzzi. The manual harvest starts in the first decade of September, in order not to lose the typical acidity of the variety. The grapes are moved to the cellar on a carriage made in inox in order to protect the health of the bunches. The soft pressing process is followed by static decanting. The fermentation is managed at 20°C in inox tanks and lasts 20 days. 12 months aging, developed both in used toneaux and in concrete containers. The maturation in the bottle continues for other 5 months before the selling.
Features of the Pecorino "Centovie" DOC wine
The organoleptic analysis shows a shiny straw yellow colour full of luminous reflections. The scent recalls citrus fruits, wild flowers, elegant and spicy aromatic herbs. The taste is elegant, fresh, persistent and mineral.
