This Millesimato Victus Nature from Cantina Bonfadini is born from a blend of Chardonnay 90% and Pinot Noir 10% grapes: the vineyards have an average age of 10 years and are planted on glacial moraine soils in the hilly area. The harvest takes place manually during the first and second decades of August: this is followed by soft pressing of the whole grapes with an initial fermentation in steel at a temperature of 14-16°C. Part of the Chardonnay ferments and ages in French oak barriques for a period of 7 months. Final aging in bottle for at least 30 months.
Features of this Franciacorta by Bonfadini
It has a very delicate straw yellow color and persistent perlage. The scent recalls fruity notes of green apple, toasted hazelnut and vanilla. On the palate it is well balanced, with excellent salinity and a long, persistent finish.
