From a blend of Chardonnay 50% and Pinot Noir 50% grapes, this Franciacorta rosé OPERA by Cantina Bonfadini is born: the vineyards are located on glacial moraine soils in the hilly area and the vineyards have an average age of 10 years. The harvest takes place by hand during the first and second decades of August and the bunches are then placed in boxes. This is followed by soft pressing of the whole grapes; the Pinot Noir is vinified in pink, leaving the skins in contact with the must for 10 hours. The first fermentation takes place in steel at a temperature of 14-16°C and a part of the Pinot Noir ferments and ages in French oak barriques for a period of seven months.
Features of this Franciacorta Rosé by Bonfadini
It is striking for a very delicate pink color and a fine perlage. The olfactory notes recall cherry and red fruits while on the palate it is characterised by a marked flavour.
Recommended pairings with this rosé wine
Excellent with aperitifs, fish dishes such as fried foods, squid ink linguine, sushi and baked calamari. Serve at 6-8°C.
