Nero per Sempre is one of the most representative labels of the Pratello farm, located in the Lake Garda area. It is a structured and highly concentrated red, obtained from Rebo grapes, a grape variety born from the cross between Merlot and Teroldego. The wine's name itself recalls its profound identity and intense character, designed for long evolution over time. Production begins in vineyards approximately 30 years old, grown on pebbly moraine soils of glacial origin, rich in skeleton and with the presence of limestone. The harvest is manual and takes place at full ripeness, carefully selecting the best bunches. One of the most characteristic phases is the drying of the grapes in crates for approximately 35–45 days in a fruit shop, which concentrates sugars, aromas and structure. After soft destemming, fermentation takes place at a controlled temperature between 22 and 24 °C for approximately 20 days, followed by prolonged maceration on the skins which can last a further 10–15 days. The wine is then separated from the pomace and aged for about 15 months, half in steel and half in wood (large barrels and tonneaux), then completing the evolution with a bottle aging of about a year, which defines its final balance.
Characteristics of this wine from the Pratello Winery
It has a very intense ruby red colour tending towards garnet, with purple reflections. The bouquet is rich and layered, with notes of ripe red fruit such as plum, cherry and blackberry, often accompanied by sensations of jam and fruit in spirit. Sweet spices such as nutmeg, pepper and hints of cocoa, licorice and light toasted nuances also emerge. On the palate it is a full and enveloping wine, with a soft and velvety texture that balances with a well-present but fine tannic structure. The sip is rich, warm and persistent, with fruity and spicy returns that prolong its taste life.
Recommended pairings with this red wine
Nero per Sempre pairs perfectly with important and structured dishes, such as grilled red meats, braised meats, game and tasty preparations such as lamb or duck. It is also ideal with mature cheeses with an intense taste or rich dishes from the gastronomic tradition. The recommended serving temperature is 16–18 °C, in a large glass, to allow the wine to best express its aromatic complexity and gustatory depth.
