A White wine of the Salento tradition. These grapes are made with 100% Fiano grapes. The density is 4000 trees per hectare and the production area is located in the Taranto province. The soil is clay, not very deep and pebbly. The grape harvest takes place in the half of August. There is a cryomaceration for 6-8 months. There is a soft pressing and it follows the static cold decantation. Then there is an alcoholic fermentation at 11°C. The refinement takes place in stainless steel tanks. It keeps its organoleptic characteristics for 2 years.
