The name of this wine originates from "Mirabella's exultet" which also includes a tribute to bees. The exultets are liturgical scrolls from the southern Middle Ages. They are a sort of ante litteram multimedia product made up of parchment sheets sewn together on which the text of the benedictio cerei is transcribed, accompanied by musical notations and illustrated by miniatures that run in the opposite direction to the writing. Vinification involves the use of 100% pure Fiano di Avellino grapes. The origin of the vines falls within the company and all the grapes come from a single vineyard in Fiano which is located in the territory of the Municipality of Lapio. Harvest takes place at the end of September, during the first ten days of October at the latest, when the grapes reach the perfect degree of ripeness. The vinification takes place after a long pressing of the whole bunches, the draining must, rigorously protected from oxygen, is separated from that of the press and clarified by natural sedimentation. The fermentation takes place for 70% in stainless steel vats and for 30% in new oak barrels. This is followed by an eight-month period of elevage on fine lees regularly resuspended in wine.

A bright yellow color with clear green reflections. The scent on the nose immediately reveals aromas of cherry stone, fruit jam and dried figs. Followed by rich and complex toasted and pastry hints, accompanied by notes of pear and hawthorn. The taste on the palate is fresh, very fine and with a good structure, characterized by beautiful hints of exotic fruit, candied citrus and honey in a very light mineral matrix. Of great persistence.
