This white wine of the Salento has the IGP certification. There are used 80% of Chardonnay, 15% of Moscatello selvatico and 5% of Fiano grapes. The cultivation method is the Guyot and the density is 4000 trees per hectare and the production takes place in the San Marzano hamlet, in the Salento. The soils are located at 100 meters above the sea level with strong thermal excursion and not deep and medium –fine thickness. The grape harvest takes place in August and the grapes are destemmed and there is a cryomaceration for some hours. There is a soft pressing and it follows a cold static decantation. Then there is an alcoholic fermentation in French oak barrels. There is the aging with yeasts in barrels for 4 months with several batonnage. This wine can be aged for 5 years .
Characteristics of the EDDA Bianco Salento
It has a straw yellow color with golden reflections. The smell is floral with peach and vanilla aromas. The taste is full, rich and elegant but also fresh, delicate and mineral.
