Alcamo Cielo is a wine that praises the DOC denomination. It is produced with Sauvignon grapes, that are left on the plants drying in order to reach the ideal concentration of sugar. The local formation of the so called “noble mould” (Botrytis Cinerea) on the grapes characterizes the product. The white wine making starts with soft pressing, followed by static decanting. The fermentation process is slow and long (it reaches 4 weeks too) due to the high concentration of sugar. It is managed in inox containers at controlled temperature.
Features of “CIELO DALCAMO Vendemmia Tardiva Alcamo DOC” (late harvest)
This wine shows an amber colour that recalls the rocks in autumn, when the nature recovers from the exhausting hotness of the summer and the morning rain underlines the intense colour of the clay. Its perfume is intense and enchanting. The taste is rich, warm, wide and deep.
Recommended food pairings while tasting this wine
This wine is great with cheese accompanied by marmalade and with local sweets. It has to be served at 8°C in a high, tapered wine glass.
