Wine list | Valtellina Superiore |
100% Nebbiolo grapes selected by Mamete Prevostini in the best vineyards located in Triasso (Sondrio), in the area of Valtellina Superiore Sassella. The manual harvest starts after the first decade of October. During the winemaking, only the best grapes are selected for the pressing, that means that the ruined fruits or those hit by the mould are immediately rejected. After the elimination of stalks, the pressed grapes are poured into steel containers where the alcoholic fermentation starts. 15 days maceration on skins at 25°C, followed by malolactic fermentation in oak barrels and 10 months aging. The maturation continues in the bottle for 10 months.
Features of this wine from Mamete Prevostini winery
Intense ruby red colour tending to garnet. Its fresh perfume recalls red fruits, ibiscus and rose, supported by balsamic and spicy sensations. The taste is warm, persistent and elegant. The final is characterized by liquorice and almond, that confirm its structure.
Recommended food pairings while tasting this red wine from Valtellina
It is great with meat and medium-aged cheese. It has to be served at 18°C in a wide wine glass that helps the right oxygenation.
