The Barolo DOCG of the Ceretto winery is an exceptional wine. Rich, refined, elegant and able to wring the eye to the young thanks to its wide drinkability. The denomination is the classic one of the DOCG Barolo of Piedmont. The municipality of production and breeding of grapes is that of Serralunga d'Alba. The grapes used are those of Nebbiolo at 100%. The vineyard, which gives life to this spectacular Piedmonte red wine is located halfway between the hamlet of Baudana and the village of Serralunga d'Alba, is without a shadow of doubt one of the plots with the best exposure of the eastern side of the municipality. The orientation is South / South-East and they are at 270 and 380 meters above sea level. The soils have in proportion a high percentage of silt and clay. Precisely this characteristic gives wines that are produced in the area, a connotation of rare incisiveness. Ceretto owns 2.4 hectares, covering 8 hectares and a half of total air conditioning, characterized by the high average age of the vines, planted in the '70s. Compared to the western side of the denomination, the vineyard of Prapò is found to have a gap of the harvest age which in some vintages may exceed 10 days; this allows the grapes to mature slowly and express themselves perfectly from the polyphenolic point of view. The harvesting period is in October, when in the morning the mists rise from the humidity of the soil and the beautiful days allow the grapes to further enrich themselves with sugars dissolved in the water. Vinification takes place in at least 12 - 16 days where the must is kept under temperature controlled steel tanks with automatic and computerized system of pumping over and punching down. Aging in 1600 liter French oak barrels and in some small 400 liter Allier barrels for 36 months. Then the bottling after the necessary aging in cask at least 8 months before the introduction on the market.
Characteristics of the Barolo DOCG
It is an exceptional wine. It has an intense ruby red color with orange reflections. The smell is delicate of rose and violet very persistent. The taste is typical of the Barolo. It is velvety, dry, powerful and persistent.
Suggested pairings with this Barolo Ceretto
It is perfect with red meats, aged cheeses and the pastas with meat sauces. This Barolo DOCG Ceretto must be served in a Ballon wine glass at room temperature. It is produced only during the best years.
