From the vinification of fine grapes from the Nerello Mascalese’s vines for 90% and 10% Nerello Cappuccio, bred within the administrative boundaries of the Cottanera company, in Castiglione di Sicilia. Harvest takes place during the month of October. Vinification takes place by destemming and maceration in contact with the skins at a controlled temperature of 28 ° with frequent pumping over and punching down. The refinement takes place in steel for about 5 months.
