The Sant’Antimo Riserva wine is the symbol of Tuscany and it is made by 70% of Trebbiano and 30% of Malvasia grapes that has to wither on the trellis for about 90 days, according to the ancient tradition, to have more sugars. After the pressing, the fermentation and the slow aging takes place in little barrels of 100 liters for 8/9 years on the “mother” which is a mix of yeasts and bacteria which is preserved every year and influences the organoleptic characteristics of the Vin Santo. the cultivation is located at 127 meters above the sea level. The picking is manual and the cultivation method is the cordon spur pruning.

It has an amber and deep color. The smell has dry apricots, bitter almonds and honey aromas and the taste is not so dry or sweet with a good acidity which makes it versatile.
