The Vinsanto of the Chianti Classico DOCG is most classic product of the Tuscany tradition. The Vinsanto has a fascinating character because it is modern and ancient at the same time, sunny and crepuscular, vibrating and weak, strong and lascivious and suitable to be drunk during convivial meetings in holidays or alone as meditation wine. This is a particular wine that born from the grape death. Its production is based on a long withering of the grapes. The blend is made by Trebbiano toscano, Chianti Malvasia and Canaiolo Nero grapes that after a long withering, they ferment in oak barrels.
Characteristics of the Vinsanto del Chianti Classico DOC wine
It has a gold color tending to an amber one with light orange reflections. By observing this wine you can already understand its wide and decided sensations. The honey, raisin, dried fruit and wood are the main aromas that envelop the taster. This aromas are persistent for long time. The taste is balanced, and the sweetness is not filling thanks to the fresh acidity and to a vibrating and persistent aromatic taste.

The Vinsanto di Chianti Classico DOC is suggested with aged cheeses such as the pecorino flavored with honey. It is very good with bakery which could be immerse in the wine. It is perfect as meditation wine. It has to be served at 20°C in Renano wine glasses such as the Tulip.
