The Vin Santo Occhi di Pernice is produced in Tuscany by Boscarelli winery. The must obtained by pressing Malvasia, Grechetto and Trebbiano grapes, naturally dried. Vin Santo Santo Toscano belongs to the oldest tradition. It is the wine of welcome and of being together. The name seems to derive from the fact that the grapes from which it comes, were left to wither until the Holy Week, that of Easter, when they were pressed and pressed and fermented in barrels of different woods, between 20 and 50 liters, sealed with sealing wax.
