The Shymer from the Sicilian winery Baglio di Pianetto was born from the use of organic Syrah and organic Merlot grapes grown at Tenuta Pianetto and Tenuta Baroni, near Palermo and Noto respectively. The harvest for this blend takes place between August and September and leads to the harvesting of the best bunches: we then proceed with pressing and fermentation using yeasts. Finally, the procedure concludes with the aging phase, which initially requires a stay in French oak barriques for 12 months and in bottles for another 2 years.
Characteristics of this Sicilian wine
It has a deep deep ruby red color. On the nose it is complex and elegant, with scents of berries, ripe cherry, blackberry and currant, accompanied by floral notes of rose and violet and spicy and tertiary aromas due to the wood, such as vanilla, cocoa, pepper, coffee and light toasted nuances. On the palate it is full, soft and structured, with silky and well-integrated tannins, good freshness and a long aromatic persistence that recalls fruit and spices.
Recommended pairings with this Sicilian red wine
It pairs very well with red meats, roasts and braised meats, game, rich first courses such as ragù pastas and mushroom risottos, as well as aged cheeses and tasty Mediterranean dishes. Serve at a temperature of 16-18°C.
