This Sicilian red wine is made from 100% organic Nero d'Avola grapes grown on vineyards located at 800 m above sea level, where the soils are clayey and calcareous. The harvest takes place by hand in September and after careful selection of the bunches we move on to the soft pressing phase and subsequent fermentation in temperature-controlled steel. Refining takes place for 9 months in steel and then for another 3 months in bottle.
Characteristics of this Sicilian wine
It has a deep ruby red color with purple highlights. On the nose it offers aromas of ripe cherry, plum and berries, accompanied by spicy notes of black pepper, licorice and light balsamic nuances. On the palate it is soft, warm and enveloping, with velvety tannins, good structure and a pleasant final persistence characterised by fruity and spicy calls.
Recommended pairings with this Sicilian red wine
This organic Nero d'Avola pairs very well with flavorful first courses, grilled red meats, roasts, and light game. Also excellent with aged cheeses, traditional Sicilian cured meats and Mediterranean dishes rich in spices and aromatic herbs. Serve at a temperature of 16-18°C.
