Spumante Dolce Recioto della Valpolicella DOCG DOMINI VENETI

This elegant Recioto della Valpolicella Classico DOCG Sparkling wine is a blend, composed by 60% Corvina, 15% Corvinone, 15% Rondinella and 10% other grapes. The vineyards are located in the traditional area of Valpolicella, on the hills of Negrar. The harvest is planned in the last week of September and it is managed manually. The wine making considers a drying process that lasts 120 days. In January the stalks are eliminated and the pressing starts. The fermentation temperature is set on 12-23°C and the maceration lasts 20 days. The malolactic fermentation is followed by the aging in steel, that lasts 6 months. The second fermentation is managed with Charmat Method and lasts 6 months.

Features of this product of Domini Veneti Winery

Intense ruby red colour with violet shades. Its fruity perfume is characterized cherry and dark cherry. The taste is sweet and recalls cherry jam.

Recommended food pairings while tasting this Sparkling wine

Excellent with dry sweets like “Sbrisolona” cake, “Cantucci” and “Pandoro”. It has to be served at 8°C in a high, tapered wine glass.
