This red wine from the Friulian winery Monviert is made from pure Schioppettino grapes: Schioppettino is the name Ribolla Nera takes in the municipality of Prepotto and its surroundings. After the harvest, the grapes are destemmed and left to macerate for 6-8 days in such a way as to extract maximum colourings, tannins and flavourings, thanks to frequent reassemblies. Thus begins the alcoholic fermentation and then proceeds with pressing the pigiato: once the alcoholic fermentation is completed, malolactic fermentation is started thanks to the addition of selected bacteria. This leads to the final stage of refinement in steel and barriques for 8 months.
