The Pinot Noir grape variety represents the highest expression of the San Michele Appiano winery and of the Trentino territory in terms of red wines. In addition to being one of the oldest cultivated vines, Pinot Noir is considered one of the finest red wines. Cultivated for over 150 years, it is one of the most appreciated red wines in South Tyrol. Thanks to the Saignée method, which involves the delicate extraction of the juice from the must, we obtain an excellent juice with which we vinifie a fresh, fruity and juicy rosé wine. The vineyards are located in the selected location in the municipality of Appiano and all have exposure to the South, South/East, South/West. The soils are characterized by morainic deposits and gravelly soils with a calcareous content. The form of breeding is that of Pergola and Guyot. The vinification involves the use of the Saignée method. With fermentation and aging in steel vats.
