The Rosazzo Pignolo DOC of Cantina Vigne di Zamò is obtained from bunches of Pignolo coming from the company's vineyards of Rosazzo, Udine. After the harvest in early September, the grapes are placed in the cellar at the maximum stage of ripeness. Subsequently, the maceration takes place in wooden vats and tonneaux for about twenty days. Following the racking and traditional pressing and decanting in barrique. The malolactic fermentation then takes place and after 24 months of refinement it is blended and left to rest for a further 2 months in the large vat. For a further two years it ages in the bottle before being put on the market.
Pignolo Rosazzo DOC’s features
On the organoleptic examination, this Friulian red wine shows a ruby red colour tending to garnet with aging. The nose is dominated by sweet notes of ripe red fruit, tobacco and oriental spices. The sip is of excellent structure, well worked in the tannic texture and long persistence.
Suggested food pairings while tasting this red wine
It is excellent with both game and aged cheeses. Perfect to be sipped as a meditation wine too. This wine should be served at a temperature of 18°C in a large glass.
