This particular and prestigious white wine is limited produced with a very high quality level. The production is around 4000 bottles per year to better express the strong character of the local grapes from Granazza di Mamoiada. The Granazza Perda Pintà of the Giuseppe Sedilesu cellar is a particular wine and its scent has intense aromas like the Mediterranean scrub which can be matched with an intense and complex palate but balanced with a charming and deep aftertaste. It is perfect both with meat than with fish soups and medium aged chesses.
Characteristics of this white wine from Sardinia
The vines are cultivated in trees to respect the tradition of the cultivation from Sardinia. The soil production is made by granite and the vines are from 50 to 100 years old for this reason they produce a great character and high qualitative structure, but very limited in fact the production is around the 40 q. per hectare. The grapes used is 100% singe variety of the Granazza di Mamoiada grapes. There is a soft pressing of the grapes, it follows a static racking and the fermentation takes place naturally as taught by the tradition. The same formation takes place also in barrels of 225 liters for 8 months with a temperature that can reaches the 34°C. Before the bottling and the commercialization it is necessary a light filtering by pressed paper filters, and a refinement of about 3 months in bottle.

The best matches with the white wine Perda Pintà IGT is mostly with grilled white meats and also with fishes mostly if structured and dressed. The sea soup both with then without tomatoes, the stuffed orata, and baked green fish. The match with the cheese is perfect with primosale. It has to be served in flute to mark and concentrate the scents. The service temperature has to be lower than 16°C. This allows to better appreciate the persistent and sapid aftertaste.
