The Talò line of the San Marzano winery follow the history and the tradition of the Salento which is the territory where it born. This wine has an IGP certification and for its production it is used the Malvasia Nera of Brindisi grapes. The density is 4500 trees per hectare and the production area is the San Marzano, in the Salento. The soils are located at 100 meters above the sea level and the soil is clay not so deep with stones. In the second half of September it takes place the manual grape harvest and it follows the thermos-conditioned maceration for 10 days followed by the alcoholic fermentation with selected yeasts. Finally, it takes place the aging period of 6 months in French oak barrels.
Characteristics of the Talò Malvasia Nera Salento
It has an intense ruby red color. The smell is complex, with ripe red fruits aromas together with spices. The taste is strong, but soft with a long persistence.
Suggested pairings with this San Marzano
The red roasted meats and the medium aged cheeses are the perfect matches. It must be served at 18°C in a Ballon wine glass and the proof is 13.5%.
