The Prestige Cuvée boasts the Franciacorta DOCG designation. The blend is made up of Chardonnay grapes mainly for 75%, to which are added Pinot Bianco grapes for 10%, and Pinot Nero for 15%. The origin of the 96 Chardonnay vineyards, from the average age of 27 years, lies in the territories of Erbusco, Adro, Cazzago San Martino, Corte Franca, Iseo and Passirano. The three Pinot Bianco vineyards, with an average age of 21 years, are located in Passirano. And the 17 Pinot Nero vineyards, with an average age of 19, are located in the Erbusco, Provaglio d’Iseo and Passirano. The vinification requires that the base wines of the Cuvée Prestige are obtained by applying a rigorous vinification protocol. The hand-picked grapes are codified vineyard by vineyard, cooled in the cell and, before being pressed whole, are selected by expert eyes and hands. Alcoholic fermentation takes place in thermo-conditioned steel tanks, where the wines remain until the following March. Seven further months of refinement are necessary for the wine to clear up, mature and bring out the best character of the vines of origin. Subsequently, the wines are expertly blended with noble reserve wines of the best vintages (from 20 to 30%) in the "magic rite" of creating the cuvée. This particular technique gives the Cuvée Prestige a strong personality. The essence of Franciacorta in the Ca 'del Bosco style. Only after an average aging on the lees of 25 months this Franciacorta can express all its richness and identity. The dégorgement takes place in the absence of oxygen, using a unique system in the world, designed and patented by Cà del Bosco. This avoids oxidative shocks and further additions of sulphites, making our Franciacortas purer, more pleasant and longer-lived. Finally, each packaged bottle is uniquely marked, to ensure its traceability.
Franciacorta Cuvée Prestige's features
Upon organoleptic examination, this Franciacorta sparkling wine has a bright straw yellow color. Fine and persistent perlage. The scent on the nose shows delicate hints of white flowers and yellow pulp fruit, with a nice hint of pastry and a slight herbaceous reference. The taste is absolutely pleasant, clean and lively, it extends harmoniously on a marked mineral texture and notes of exotic fruit.
Suggested food pairings while tasting this Franciacorta Cuvée Prestige
The Cuvée Prestige by Ca'del Bosco goes well with light appetizers based on fish or vegetables, simple seafood main courses and small shellfish. Excellent with fish carpaccio and sushi or even as an aperitif. The optimal serving temperature is 6°C in a tall and tapered glass.
