Franciacorta Castello Bonomi is produced with a blend of Chardonnay and Pinot Noir in equal proportions, to which 10% of a native grape variety, Erbamat, is added. Erbamat grows in the highest part of the estate, on west-facing terraces. Following the manual harvest of Chardonnay and Pinot Noir at the beginning of August, the limited quantities of Erbamat were harvested at the beginning of September. The grapes were then gently pressed, with separate vinification for each plot, fermentation and ageing in steel. The Chardonnay and Erbamat were then fermented and aged in barriques for 7 months, while the Pinot Noir was vinified in white and aged in steel.
Characteristics of this Franciacorta Brut Nature
It has a bright straw yellow colour and a fine, persistent perlage. The nose offers delicate floral, citrus and mineral aromas. The palate is vibrant and salty, with delicate fruit and a very fresh finish.
Recommended pairings when tasting this product from Cantina Castello Bonomi
Excellent with sushi, raw fish, shellfish, but also with a platter of mixed cold cuts. Serve at a temperature of 6°C in a tapered glass.
