This fabulous wine was crated to celebrate the 35th anniversary of the cellar. Its name is a homage to the founders: Paola Rovetta and her husband Paolo Rabotti, promoter and first president of the so-called “Consorzio Franciacorta”. This Blanc de Blancs is the result of a passioned research that joins the structure of the Riserva (35%) and the elegance of the actual vintage of Chardonnay (65%). The choice of best Crus confirms the philosophy of the cellar, that aims always to reach the excellence. 100%Chardonnay, cultivated in the DOCG area of Franciacorta, between Bornato, Brescia, Cazzago San Martino, Passirano, Adro, Iseo, Rodengo Saiano. After a careful selection, the grapes are harvested and placed in wooden boxes. Soft pressing and selection of the best parts of the fruit. The fermentation is managed both in wood and in steel tanks. The aging lasts at least 24 months.
Features of this Franciacorta Brut Wine
The organoleptic analysis shows a straw yellow colour, with a soft, faint and persistent perlage. Its fresh perfume recalls floral and fruity hints. The taste is balanced and defined, crunchy and pleasant. The final is deep and persistent.

It is excellent for happy hours and great with rich starters like cold cuts and cheeses. Fabulous with seafood. It has to be served at 6°C in a high, tapered wine glass.
