This wine is honored by the IGP certification. It is a rosè wine made by 100% Negroamaro grapes. The density is 5000 trees per hectare. The production area is in the San Marzano hamlet in the Salento in Puglia. The cultivation soils are located at 100 meters above the sea level and the climate is characterized by strong thermal excursion. The cultivation soils are clay not so deep with stones. The grapes harvest in manual and it takes place in September and it follows a cold pressing of the grapes for a part, and the other part pass through a drain process after 12-24 hours the start of the maceration. The musts obtained have to ferment in steel at 11°C with selected yeasts. Finally the refinement takes place in stainless steel tanks. This wine keeps its characteristics for 2 years.
Characteristics of this Rosato Salento della Cantina San Marzano
It has a pink bright color with ruby reflections. The smell is intense and persistent with cherry, rose and pomegranate aromas. The taste is bodied, fresh and balanced.
Suggested pairings with this rosé wine
This wine is perfect with fish soups, bakery food, young cheeses or lightly aged. It must be served at 14°C and the proof is 11,5%.
