The white wine Dut Un, produced by the worldwide famous winery Vie di Romans, praises the denomination Friuli Isonzo DOC. It is a blend, composed by 50% Chardonnay and 50% Sauvignon Blanc. Its grapes are cultivated in the territory of Gorizia, where the soils have a medium depth with a good structure full of limestone and red clay, generated by the presence of iron and aluminium oxides. The cultivation method is the classic Guyot with Cordone Speronato. The wine making process considers first the removal of stalks and then the soft pressing of the grapes followed by cooled maceration at a controlled temperature 8°C. In this phase, the clarification of the must is developed statically. The fermentation temperature, always controlled, in this case is quite high, between 16 and 19°C. The yeasts are selected and the fermentation can last even more than 20 days. The maturation doesn’t contemplate the malolactic fermentation. The “elevage” gives class to this product and lasts for 9 months. In this phase the wine rest on its yeasts. In the last step of the process, the clarification and the aging in the bottle for 19 months.
Features of Dut Un produced by Vie de Romans
Gold yellow colour with green reflections. Its perfume is rich of butter hints and vegetables, milky sensations, fresh almond, mint and sage. The taste is enchanting, rich and savoury, gritty and elegant.
Recommended food pairings while tasting this great white wine
Excellent for a classy happy hour. It can be matched also with structured starters, cold cuts and delicate cheeses. Great with meat, pasta and soups. Sublime with fish. It has to be served at 10°C in a high, wide wine glass.
