Cumaro is produced with 100% Montepulciano grapes, cultivated in Osimo, the area of Conero, Marche. The elevation of the hill swings between 150-200 meters above the sea level, eastern exposition. The deep soil is characterized by clay, limestone and sands. The production capacity of the vineyard varies depending on the vintage, but it is set around 60-80 quintals per hectare. The manual harvest is planned in October, when the grapes reach the perfect maturation. The soft pressing and the elimination of stalks are followed by fermentation, managed at 28°C in steel for 12-14 days. After the malolactic fermentation, the wine ages in barriques for 12-14 months. The maturation continues in the bottle for other 6-8 months before the selling.
