From the San Marzano winery this great red wine of the “Rosso d’Italia” typology. For its production there are used the best red berries of the vineyards of the Salento. The cultivation soil is located at 100 meters above the sea level and the soil is clay, not so deep with some stones. The cultivation method is the little tree which are 50 years old with 4-6 buds per tree and a production of 1 kg for log. The grapes harvest takes place in September and there is a soft destemmed and pressing of the grapes with a pre-fermentative cold maceration and it follows the alcoholic fermentation with yeasts. It follows the disgorging. There is the malolactic fermentation in steel and a following permanence in oak barrels for 12 months. This wine can be aged up to 7 years.
Charactristics of the Collezione Cinquanta Vino Rosso d'Italia
It has a ruby red color with garnet reflections. The smell has an intense bouquet with prune and jam aromas together with vanilla and licorice hints. The taste is intense, structured and soft. The end is long.
