It is enveloping in the smell and extravagant in the taste. The Prosecco Superiore Cartizze Dry of Santa Margherita is the ideal element to join the convivial evenings between friends at the end of the meal. The production of the Valdobbiadene Prosecco Superiore Cartizze Dry takes place in autoclaves for the re-fermentation for at least 18-20 days with the help of selected yeasts at 14°-16°C. Once got the over-pressured desired which is around 6 bar, the wine has to be cooled at -4°C to stop the fermentation and to help the stabilization. Then the bottles are kept under temperature control for one month to help the natural aging on contact with yeasts. Once finished it takes place the filtration and the isobaric bottling. This Valdobbiadene Prosecco Superiore Cartizze DOCG Dry is produced by Glera grapes in the core of the DOCG Valdobbiadene. The soils are located at 200-500 meters above the sea level and they are characterized by moraine origins with some presence of clay. The vines are cultivated with the Sylvoz – Cappuccina method with a density of 3000-4000 trees per hectare. The grape harvest takes place in September.
