This Carmenero from Ca' del Bosco Winery is produced with 100% Carménère grapes, grown in the company's vineyards of Passirano, near Brescia. The grapes are harvested in September, after a careful selection in the vineyard: alcoholic fermentation and maceration last for 18 days and after racking, the still warm wine is decanted into small oak barrels where it remains for 12 months. It ends with a bottle aging of 3 years and 3 months.
Characteristics of this red wine
The organoleptic test shows an intense ruby red color; the nose is characterized by balsamic scents and fruity and vegetal aromas on the finish. In the mouth it is full and powerful, soft and balanced.
Suggested food pairings while tasting this red wine
Excellent with roasted and grilled red meats, but also stewed. Try it with aged cheeses. Serve at a temperature of 16-18°C in a fairly large glass.
