From the vinification of grapes from the vines of Corvina Grossa 50%, Corvina 40%, Rondinella 10%. as all the grapes of the company are certified organic and for some years the funds are conducted according to the principles of biodynamic agriculture. The production area is the DOCG of Val di Mezzane, in Veneto. The harvest includes the selection of the best grapes are harvested by hand and placed in boxes for drying in February/March of the following year, to be subsequently crushed. It follows the vinification carried out at the low temperatures of the period and the fermentative maceration for 1 month in wood, until the complete degradation of sugars, allow the development of particular and intense aromas. The wine is then aged in oak barrels and barrels of different sizes, in which the extraction of tannins in the wood varies in concentration precisely because of the different sizes of the same. The wine remains in barrels for 36 months and then, after a skilful blend, it rests in the bottle, which ages for 6 months in order to achieve a balance of roundness and a rare verifiability.
Characteristics of this Amarone della Valpolicella DOCG
The wine has an impenetrable ruby red color. The aroma is the classic one of Amarone with an intense nose, with balsamic notes, persistent and broad, ranging from small red berried fruits of currant and strawberry, to cherry jam. The taste on the palate is equally imperious, soft and silky, with hints of sweet cocoa and final almond timeless.
