This Alta Langa DOCG Valentina wine from Bel Colle Winery is a cuvée of 90% Pinot Noir and 10% Chardonnay grapes grown on clayey-calcareous soils. For the production of this Classic Method sparkling wine, the grapes are crushed but not pressed in order to extract the first part of the must and obtain the free-run juice. Fermentation follows in steel and French oak tonneaux. The tirage, one of the key moments in the Metodo Classico, consists of preliminary bottling with the addition of liqueur de tirage to trigger the second fermentation and prise de mousse, and takes place in the spring following the blending: the wine then rests for at least 36 months at a temperature of 13°C. Once disgorging has taken place, i.e. the removal of the residual yeasts left in the bottle after the second fermentation, no sugar is added.
Characteristics of this Piedmontese sparkling wine
It has a very delicate straw yellow colour and a persistent and very fine perlage. The bouquet is dominated by fruity and floral notes, while the palate is elegant but decisive.
