This special cuvée enhances the purest expression of the area, through the use of pure chardonnay grapes. This BIANC 'D BIANC, a Piedmontese expression for blanc de blanc, is made from grapes from calcareous marly soils that give the wine a certain flavour: the harvest is carried out by hand and the bunches are then placed in boxes: light pressing and fermentation in steel follows for almost three weeks, after which the wine rests on the yeasts. At the end of winter the cuvée is assembled, with wines from a single harvest. The foam intake takes place in the bottle and finally it has a long aging period of 4 years.
Characteristics of this Alta Langa DOCG
It has a straw yellow color and a fine, persistent perlage. On the nose, notes of white fruits and flowers are appreciated, while on the palate it impresses with a delicate and enveloping effervescence with hints of white chocolate and sweet fruit.
Recommended pairings with this Piedmontese sparkling wine
Excellent with cured meats, cheeses, appetizers in general: also worth trying with fish-based dishes, especially fried and raw ones. Serve at 8-10°C.
