Preserved for more than 100 years, “Madre” is the sediment of yeast full of proteins that determines the fermentation of Vin Santo. It represents an oenological, cultural heritage that guarantees the authenticity of the product and save the ancient techniques. This wine is produced with 70% Malvasia and 30% Trebbiano. Tradition, experience and care are the primary ingredients for Vin Santo di Montepulciano. The wine-making considers the drying of the grapes on trellis for 4 months. After the pressing, the must ferments in containers of 100 litres, sealed with wax, where it rests for minimum 7 years.
Features of “Vin Santo di Montepulciano DOC”
Intense amber colour. The perfume is deep and complex, with wide sensations of fig, apricot, plum and dried fruits. Its taste is wide and enchanting, with a long and smoot final.
Recommended food pairings while tasting this Vin Santo by Trerose
As a good Vin Santo, it is excellent with dry patisserie, pies, biscuits, especially with “cantucci”. It has to be served at 12-14°C in a small, tapered wine glass that concentrates the perfumes.
