"Genuinum vinum ad verum amicum. Sincere wine for a sincere friend. Dedicated to Aulo Guidi, creator of the graphic image of San Felo. This production is the result of the wise and conscientious vinification of 100% pure Cabernet Sauvignon grapes.. Grapes bred in Tuscany. In the DOC area. The harvest of the grapes awaits the perfect climatic conditions that have allowed the grapes to ripen in a uniform way. The grapes, reached a perfect phenolic ripeness and after repeated tastings, were harvested by selecting the best bunches. The vinification of the grapes follows, once arrived in the cellar, they were gently destemmed. Half of the grapes carry out alcoholic fermentation in barriques with manual fulling and the other half in steel tanks at a constant temperature of 30ºC. The transformation from grapes into wine takes about a week and then a maceration on the skins that varies from 2 to 6 days. Finally, the aging, once the skins have been separated from the wine, was immediately put in 2.25 hl barriques where a subsequent aging for 18-24 months will follow. After a slight filtration, it is aged in bottle for a further 12 months.

The wine has an intense ruby red color. The nose is expressed with complex and refined notes; dominate hints of ripe red fruits. The taste on the palate is soft, enveloping and with a velvety tannic texture.

An excellent wine in combination with red meats and aged cheeses, it also goes well with soups. The optimal serving temperature is 18ºC in a large glass.
