"A real pearl of the Terlano Winery. It belongs to the selection called the" Rarity ". Special bottles of aged white wines, aged for at least ten years on fine yeasts in pressurized steel tanks. What fascinates most of these wines is the freshness of their youth, an element that makes this Terlaner extremely compelling, despite its venerable age.It is a wine that lends itself perfectly to mature for a long time in the bottle. Terlano has a terroir very congenial to great white wines , and these Rarities are the most concrete proof of it: the denomination is the classic DOC Alto Adige Terlano The blend includes grapes of Pinot Bianco, Chardonnay, Sauvignon Blanc, harvested in 1991. The vineyards are located at an altitude of 250 meters above sea level and the vines also reach soils up to 900 meters in height The slope varies from 5% to 70% Exposure is always towards South - Southwest The wine making process requires that the grapes undergo soft pressing with a pneumatic lung for 30 minutes. After fermentation and 10 months of aging on rough lees in 2,500-liter wooden barrels, the wine is matured for another 24 years in 2,500-liter steel containers, but only on fine yeasts. In January 2016, after a contact with the yeasts of 25 years, the wine was finally bottled. The extraordinary length of aging on fine yeasts has made Terlaner 1991 Rarity unique. The mannoproteins and amino acids released by the autolysis of yeasts have in fact ennobled the taste and aromas of wine. It lends itself to a further long aging in the bottle if it is stored in a cool place with a constant temperature and high humidity, well ventilated and exposed as little as possible to light.
