Fushà Extra Brut BIO is an organic sparkling wine obtained mainly from Inzolia grapes grown in high-altitude vineyards located in the Piana degli Albanesi area, approximately 700–750 metres above sea level. Winemaking involves soft pressing of the grapes and initial fermentation in temperature-controlled steel to preserve varietal aromas. The foam is taken in an autoclave according to the long Charmat Method, with a longer stay on the yeasts than the Brut version, followed by aging in the bottle. This process gives greater complexity, structure and elegance to the bubbles.
Characteristics of this Sicilian wine
It has a bright straw yellow color and a fine, persistent perlage. Floral and citrus scents emerge on the nose, enriched with notes of Mediterranean scrub, rosemary, mint and light balsamic nuances. On the palate it is fresh, savoury and vibrant, with a good structure and a long, mineral closure that recalls the altitude of the vineyards.
Recommended pairings with this Sicilian white wine
This sparkling wine pairs very well as an aperitif and with seafood appetizers, shellfish, fish tartare and sushi. It is also suitable for light Mediterranean dishes, fresh or grilled vegetables and delicate fish-based preparations. Serve at a temperature of 6-8°C in a tapered glass.
