From the vinification in absolute purity of 100% Sauvignon grapes. The origin is the one in which the Company operates: Alto Adige Val Venosta. For the harvest, only the best bunches are hand-picked at the end of September. For the vinification, the Sauvignon grapes ferment in large acacia barrels, after which there is an aging of ten months on the coarse lees, always in the same barrels. After bottling in early summer, the wine matures for another twelve months in the bottle where it will fully develop its character.
Sauvigon DOC Falkenstein’s features
A bright straw yellow colour. The scent is the classic one with intense aromas of grapefruit, elderberry and passion fruit. The taste is absolutely precise and fresh in the mouth, structured, with a pleasant flavor and a long aromatic persistence.
