From the pure vinification of Ribolla Gialla, an ancient variety native to the Friuli region. The grapes come from within the estate of Tenuta del Castello di Spessa in Friuli Venezia Giulia. Vinification involves the traditional white wine procedure, with grapes harvested manually in 15 kg crates, followed by soft pressing with a pneumatic press, static decantation of the musts, and fermentation at a controlled temperature of 18°C in steel tanks.
