The deep knowledge of the vineyard, the selection of the most ancient vines and the constant research in the production process give awareness of the elevated potential of the Trebbiano di Lugana. Thanks to the pruning techniques, the thinning and the selection of the grapes with a late picking, the Le Quaiare can express the most authentically territory of the Lugana. It is made by 100% Trebbiano di Lugana grapes. The grapes are cultivated with the trellised method with a density of 5000 trees per hectare. The cultivation soils are light slopes with a calcareous-clay consistence located in the Garda lake. The grape harvest takes place in the half of September and it follows a soft pressing of the grapes in steel tanks at 14-16°C. The aging period occurs in steel tanks with end-fermentation yeasts for three months with a periodic shuffling of the yeasts.
