The Pratello winery's Riesling originates in the moraine hills of Lake Garda, in an area characterized by pebbly soils of glacial origin and a high presence of limestone. The vineyards, located at about 300 meters above sea level, are made up of old plants that give wine considerable complexity and evolutionary capacity. The production philosophy is oriented towards respect for the plant and the environment: careful agronomic practices, organic fertilization and no defoliation are used, while the harvest is carried out strictly by hand to select only the best bunches. The winemaking of Riesling Pratello begins with a soft pressing of the whole grapes in an inert environment, to avoid oxidation and preserve aromatic purity. The flowering must ferments slowly for about 15–20 days, progressively developing its typical olfactory profile. The wine then ages in steel for about five months, a phase that enhances its freshness and mineral tension. Before being put on the market, it completes its evolution with a few months of bottle aging, which stabilizes its balance and finesse.

It has a bright straw yellow color, crossed by greenish reflections that underline its youth and vivacity. On the nose it expresses a very characteristic profile, with notes of Mediterranean aromatic herbs, white flowers and jasmine, accompanied by an evident mineral component and slightly hydrocarbon aromas, typical of the grape variety. With evolution, more complex shades of flint and slate can emerge. On the palate it is tense, vertical and savoury, with a marked freshness that gives great flow and a long, clean and mineral finish.
Recommended pairings with this white wine
It is a white wine of great personality, particularly suitable for combinations with raw fish, tartare, sashimi and sushi, but also with dishes based on delicate fish or light Asian cuisine. Its freshness and savoury component also make it ideal as an aperitif wine or as an accompaniment to light and refined preparations. The recommended serving temperature is approximately 12 °C, in a large glass that favors its aromatic expression and complexity.
