An exclusive sparkling wine, produced in the best vintages only. This Franciacorta Dosaggio Zero Riserva from the Lo Sparviere winery comes from a very selected choice of Chardonnay bunches from the vineyards of Monticelli Brusati, at 180 m above sea level, on soils rich in calcareous marl. Manual harvesting takes place from the third ten days of August, after which the bunches are refrigerated in a special cell for 24-36 hours, in order to preserve the aromas. This is followed by soft pressing of the whole bunches and controlled fermentation at approximately 18°C which takes place 60% in steel and the remaining 30% in barriques: aging in the bottle requires a minimum time span of 72 months.
Features of this Franciacorta Lo Sparviere
It features a fine, persistent perlage, with a soft foam and a straw-yellow color. The olfactory notes recall hints of sweet roast, dried fruit, tropical fruit, and yellow peach. On the palate it is firm, fragrant, with a long, persistent finish.
Recommended pairings with this Zero Dosage Reserve
Excellent as an aperitif with puff pastry or brisé, fish-based dishes such as marinated salmon, creamed cod, raw fish. Serve at 8-10°C.
