This wine was born from the union of Chardonnay grapes from seven micro-vineyards located between Cormons and Moraro, for a total area of less than three hectares. The grapes are vinified in white with soft pressing and fermentation at a controlled temperature around 19 °C with selected yeasts. After fermentation, the wine ages for about twelve months in large-capacity oak barrels, in contact with fine lees, a choice that helps develop its complexity, structure, and softness, without resorting to malolactic fermentation.
Characteristics of this Friulian wine
It appears in the calyx with an intense straw yellow colour tending towards golden. On the nose it expresses a rich and complex profile, with citrus notes, ripe yellow fruit such as golden apple and pear, tropical aromas and nuances reminiscent of hazelnut and fine pastry. On the palate it is broad, enveloping and well-structured, with a sensation of softness balanced by a good freshness and a long and harmonious closure, characterised by savoury and slightly mineral returns.
Recommended pairings with this white wine from Ronco del Gelso
It pairs particularly effectively with structured yet delicate dishes, such as preparations based on white sauces, soups, white meats, boiled meats and stewed meats. Its aromatic richness and softness also make it suitable for elaborate fish dishes and complex gastronomic preparations, where a wine capable of sustaining consistency and saltiness without overpowering the food is needed. Serve at 12-14°C.
