SCHOLA SARMENTI

After a long and careful restoration lasting over three years, Schola Sarmenti finally opens the doors of the winery to the public. An old wine factory built in the mid-nineteenth century and remained closed for over fifty years. The Marra and Calabrese families have thus brought back to splendor an ancient symbol of Salento’s enology, the fulcrum of an important architectural tradition, in which culture and territory are transmitted to the visitor through the impetuous beauty of the vaulted ceilings made with ashlars of tuff and Lecce stone. The embrace between the present and the past finds its maximum expression in the unique details, really able to excite. Slowly descending from a small central staircase, the heart is pervaded by an intense scent, while the legs wish to hurry, eager to discover that underground world. The last step is finally immersed in the wine. A barrique made from old tanks that follow one after the other. The right temperature and constant humidity throughout the year make it a perfect environment where the barrels keep that wine that, once in the bottle, will end up resting in purple red walls. A place in which to breathe the air of a distant past, while the scents of wine and wood leave a foretaste of the result of this slow rest: the near future.
