This Brunello di Montalcino Riserva "Colombaiolo" from the Tuscan winery Casisano is produced with 100% Sangiovese grosso grapes from the best parcel of the Colombaiolo vineyard, among the highest in the appellation. Following the manual harvest, fermentation continues at a controlled temperature of about 28-30°C in wooden vats. The refinement requires a permanence in wood of at least 4 years in Slavonian oak barrels and finally in the bottle for at least 6 months.
