From the grapes of Monforte d'Alba, raised on vineyards with an average age of 37 years comes this Barolo from the Marziano Abbona. Once harvested during the harvest, the grapes are subjected to destemming and pressing with subsequent 24-hour film maceration. Thus begins spontaneous alcoholic fermentation using indigenous yeasts and in contact with steel peels, for 19 days. Once the malolactic is also finished, aging begins in a 25-hectolitre barrel for 36 months, then assembly without filtration. The wine rests further in the bottle for three months before being marketed.
Characteristics of this Piedmont wine
It has a ruby red color with garnet reflections. The olfactory notes recall very intense notes of purple, berries and balsamic herbs. On the palate it is structured, full and enveloping, with remarkable persistence.
Recommended pairings with this red wine
Ready to drink immediately but also with great aging potential. Try it with braised meats, stews, boiled meats, and fillets. Perfect even with first courses based on elaborate sauces. Serve at 18°C.
